The oil-bearing seeds are protected by the bitter pulp of the fruit. The unripe fruit can be eaten but the oil is extracted through a process called "milling". Olives are fruit that has been formed in the olive's ovary and then they are covered with a protective layer of mucilage. Mucilage (meaning, "gum") is a type of gel that can be found in many fruits.
